Recipe of the Month

Rosemary, Fig & Goat Cheese Spread

Ingredients:
4 oz. fresh goat cheese, at room temperature
1½ tsp. finely chopped fresh rosemary
2 tsp. honey
2 dried mission figs, soaked in hot water for 5 minutes, drained and finely chopped
2 slices good-quality prosciutto, roughly chopped

Directions:
1.      Process cheese in a food processor until very smooth; add rosemary and honey and pulse until combined.
2.      Move cheese mixture to a small mixing bowl and fold in figs and prosciutto; serve with crostini, flatbread or crackers.
