Chef Perron is available to do private parties in the teaching kitchen, depending on availability.

Risotto 101

 

Long-regarded as a technical difficulty – risotto is actually a simple dish to master. Chef Rachael Perron learned to make perfect risotto in Italy where this classic creamy indulgence isn’t reserved just for special occasions. Whether you want to make it for a date or just a weeknight meal for family or friends, Chef Perron will prove that you, yes you, can make perfect risotto every time. (IMPORTANT NOTE: To ensure the maximum benefit, this class will be primarily  demonstration, though there will be ample opportunity for all interested participants to get a close up with each of the dishes and exercise their elbows as they practice stirring techniques.)

A Modern Approach to Sauces and Dressings 

You don’t have to be a chef to know that sauces make the difference between a good meal and an incredible one. Tonight we will explore both classic and modified techniques a modern culinary enthusiast can use to enhance basic recipes. We’ll discuss and demonstrate  Béchamel, cheese, cream and marinara sauces, Velouté, raw sauces, and super simple recipes for warm and cold sauces that are particularly great with meats and  fish. We’ll also break down fundamental formulas for both creamy and vinaigrette dressings for salads. We’ll taste the demonstrated recipes with pasta, crostini and roasted and grilled meats, as appropriate.
